Take Your Taste Buds to Greece With This Heavenly Vegetarian Greek Sandwich

I know you see that mountain of tangy veggies piled high. You’re probably thinking, “how the hell am I going to tame that?” Don’t worry. Once you bite into the fresh, crunchy goodness, you’ll make it happen on instinct. Those fillings aren’t going anywhere.

That being said, this sandwich would work on lots of other breads. I used simple whole wheat slices, but pita bread would actually work even better. You know my style — imperfect, improvised, use-what-you-have-that-day recipes. So anything works…it’s really about the contents of the sandwich.

The inspiration for the sandwich

Imagine you’re sitting on the shores of any Greek island. Waves lap gently against the beach, and the sun is intense above you. You’ve come here for three reasons — the beach, the historic ruins, and the Greek salad. You yearn for that fresh feta you can’t get anywhere else, and the super-locally made olive oil. If you’re a foodie, you can tell the difference. If you’re not, you’ll enjoy it anyway.

So that…on bread. That’s what I was feeling. Now let me take you there.
